Thanks to this photo of Bottega Louie macarons that user pokeeleana submitted, I think I now know what a macaron should look and taste like. The picture shows you what they should look like, but as for taste — macaron shells should be crispy on the outside, followed by a sponge-y layer. The middle should be creamy and sweet. Every macaron I’ve had up until now always got the middle part wrong.
Overall, I approve. Thanks for expanding my macaron horizons, pokeeleana!
