Seeing someone wearing the most wonderful polka dot raincoat one day, Melissa McIntosh, also known as the baker’s daughter, was inspired enough to create a polka dot cheesecake in honor of the phenomenon.

The polka dots are made of melted dark chocolate combined with cream cheese filling– to create the dots, you use a pastry bag with a round tip to pipe the mixture into the smooth surface of the cheesecake.
