Now continuing with our Nom This; Summery refreshing foods edition, today we will bring you another delicious simple recipe, a recipe ideally for Lunch or as a snack to cope with the canicule. With that all said, I shall now reveal today’s dedication. It is to a simple dish that requires no more than 20 minutes of preparation time, something with an ‘asianery’ feel and is one of my major weaknesses, you guess it! Asian-style Chicken Salad!
Writing this article brings back numerous memories. This salad has always been the one of my best memories of my childhood (I was an anti-social child and had a great obsession for food),and growing up with it, I must say it is highly addictive. Once you had it, you just continue to crave for more and before you knew it, you already had at least 3 servings!
As far as my memory span goes, I would often remember coming home from school all sweaty and ravenous for food. But being overwhelmed from the blazing sun, I was extremely reluctant to make my way to the kitchen. Despite my sluggish behavior, I had to give in. Upon hearing the rumbling commands of my stomach, I could not resist from fulfilling the requirements and hence I had to go and scavenge through my fridge. What laid there was beyond my imagination (No, not really) and you might have guessed it, my beloved salad. DE-LI-CIOUS!! It quenched, it boosted and it fulfilled. Therefore, making it an appropriate recipe to fit this compilation.
The dish is quite eye-catching with it’s mix of varying colors, making it definitely appetizing. It is also a great healthy food option with its low fat content and high volume of vegetables! If you are being health conscious this summer, perhaps this is the food for you!
To make Asian-style Chicken Salad, you will need the following:
320g (2 cups) shredded Country Style Roast Chicken
250g wombok (Chinese cabbage), shredded
4 shallots, trimmed, thinly sliced
1 carrot, coarsely grated
1 small red capsicum, halved, deseeded, thinly sliced
30g (1/2 cup) bean sprouts, trimmed
20g (1/2 cup) watercress sprigs
2 tbs rice vinegar
1 tbs soy sauce
1 tbs hoisin sauce
1 tbs olive oil
1 tsp sugar
