Now continuing with our Nom This: Summery refreshing foods edition, today we will bring you another delicious simple recipe, a recipe that is a total ‘in’ this season, and that is of Curtis’ Lemon Curd.

You might be thinking, “Oh, no another Lemon recipe”, but to tell you the truth, there is a reason behind this! If you haven’t realized already, Summer is the season where there is a HUGE influx of these sour beast hence making it a predominant statement in varying summer dishes. Therefore, you can’t really go past a typical summer dish without having it possess a little zest.

If you are curious and wondering what a lemon curd is, you don’t need to fret. Lemon curd is somewhat like a jam with a gooey texture and composition. It can used as a topping on a piece of toast or just eaten on its own. Whatever your preference may be, it is extremely easy to make, making it an perfect food this summer. A versatile and adaptable food to compliment any snack!

To make Curtis’ Lemon Curd, you will need the following,
4 large eggs
1 cup sugar
1/2 cup fresh lemon juice
1 tablespoon grated lemon peel
½ cup (1 stick) salted butter, diced
9 ounces fresh raspberries
Powdered sugar, for garnish
